Black cod (also known as sablefish) has a silky richness and flaky texture that seems meant for this simple, yet boldly flavorful, miso glaze. The honey in the glaze adds a lovely sweetness to balance the salty, savory miso, and it allows the glaze to caramelize beautifully under the broiler.
Miso Glazed Cod
Ingredients:
Six (6-ounce) black cod (sablefish) fillets
1/3 cup shiro (white) miso
2 tablespoons honey
1 teaspoon toasted sesame oil
2 tablespoons mirin (Japanese cooking wine)
Directions:
Rinse the fish fillets and pat them dry with paper towels. In a small bowl, combine the miso, honey, mirin and sesame oil and stir well until combined.
Spoon about 2 tablespoons of the miso glaze onto each fish fillet. Marinate for at least 30 minutes, or up to an hour.
Place fish under broiler for 3-4 minutes, or until the top is slightly charred and the glaze has caramelized. Reduce the oven temperature to 375°. Cook until fish is flakes easily with a fork, 5-10 minutes more, depending on the thickness of the fish.
