¾ cup short grain brown rice
¼ teaspoon salt
4 cups of Quaker Vanilla Oat Beverage, divided
1 tablespoon sugar
1/3 cup raisins, optional
½ cup walnuts, chopped
Ground cinnamon, to taste
Place the rice in a 3-4 quart pot with the salt and 1 ½ cups of water. Bring to a boil, then reduce the heat to low, cover and simmer until the water is absorbed and the rice is nearly tender, 30-40 minutes.
Add 3 ½ cups of the Quaker Vanilla Oat Beverage. Bring to a gentle boil, then cook, uncovered, over a medium-low heat, stirring frequently, especially toward the end of cooking, until the mixture has the consistency of a thick porridge, about 40 minutes. Stir in the sugar and the raisins, if using, then stir in the remaining ½ cup of Quaker Vanilla Oat Beverage.
Transfer the mixture to a large bowl or storage container, cover and refrigerate until it is completely chilled, 4 hours.
Toast the nuts in a dry skillet over a medium-high heat, stirring often, until they are fragrant, about 3 minutes. Then allow them to cool and chop them finely.
Once the pudding is set, stir it well and serve sprinkled with the nuts and ground cinnamon.
