What could be more comforting than dipping bread into a bubbling hot dish of savory Marinara sauce laden with melted cheese? For me those warm-fuzzies are enhanced knowing it is good for you too.
2 cups marinara sauce
½ cup part-skim ricotta
1/3 cup shredded part-skim mozzarella
2 tablespoons grated Parmesan cheese
4 large or 6 small whole basil leaves
Preheat the oven to 450 degrees.
Pour the sauce into a10-inch oven proof skillet. Heat on the stove to warm through over a medium-high heat.
Remove the pan from the heat and spoon the ricotta cheese, in four large dollops, onto the sauce, tucking each dollop into the sauce slightly with the spoon. Sprinkle with the mozzarella cheese, then the parmesan cheese. Top with the basil leaves.
Bake until the sauce is bubbling and the cheese is melted, 3-4 minutes. Serve warm, directly from the skillet with slices of whole wheat Italian Bread, baked pizza dough or focaccia.
