Easy Chicken Tacos

 

I make these Easy Chicken Tacos when I am really pressed for time or feel too lazy to cook. (Yes, that happens to me too!) It is such an incredibly easy dinner, that’s also fun, healthy and totally delicious. No wonder it has become a family favorite! Part of what makes them so effortless are two healthy shortcut ingredients: rotisserie chicken and jarred salsa. 

 

Easy Chicken Tacos

 

Ingredients:

2/3 cup store-bought tomatillo salsa, or any salsa you like
3 cup shredded cooked chicken (a mix of light and dark meat from a rotisserie chicken)
8 small corn tortillas (5 inches in diameter)
1 large avocado, pitted, peeled and sliced
1 1/2  cup thinly sliced (shredded) green cabbage or Romaine lettuce
1/2 cup thinly sliced red onion and/or radish
1/2 cup lightly packed fresh cilantro leaves
Lime wedges, for serving

 

Directions:

Put the salsa into a medium skillet and heat over a medium heat until warm. Stir in the shredded chicken and cook, stirring occasionally, until warmed through, about 3 minutes.

Wrap the tortillas in a damp paper towel and microwave for 30-40 seconds, until heated through. Alternatively, warm them individually in a dry skillet over a medium heat for 15-20 seconds per side.

Place two tortillas on each serving plate. Spoon about a heaping 1/3 cup of the chicken mixture onto each tortilla. Top with some avocado, cabbage, onion and cilantro leaves. Serve with lime wedges.
