2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
¼ teaspoon dried oregano
¼ teaspoon salt
1/8 teaspoon pepper
Whisk the ingredients together in a small bowl. If the dressing seems too tart, add one more tablespoon of olive oil.
