Very Berry Baked Oatmeal

This berry-licious oatmeal bake is made with minimal added sweetener. Serve with maple syrup at the table so everyone can sweeten it to their liking. This Very Berry Baked Oatmeal makes for a perfect addition to weekend brunch.

 

Very Berry Baked Oatmeal

 

Ingredients
2 cups old-fashioned rolled oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
¼ teaspoon salt
2 cups 1% low-fat milk
2 tablespoons pure maple syrup
1 large egg
2 tablespoons neutral oil, such as avocado, grapeseed or canola, plus 1 teaspoon for brushing on pan
1 ½ teaspoons pure vanilla extract
1 cup blueberries
7 large strawberries, hulled and cup into eights (about 1 cup)
Additional maple syrup for serving, optional

 

Directions
Preheat the oven to 375 degrees.

In a medium bowl stir together the oats, baking powder, cinnamon and salt. In another bowl whisk together the milk, maple syrup, egg, 2 tablespoons of oil and the vanilla. Add the dry ingredients to the wet and stir to combine. Stir in the blueberries and strawberries. 

Brush an 8-inch square baking dish with oil. Pour the mixture into the prepared dish and bake for 40-45 minutes, until it is set and the top is golden. Scoop out with a spoon to serve; drizzle with additional maple syrup if desired.
